10 Minute Mushroom Eggs

Serves: 1 Prep Time: <5 minutes Cook Time: <5 minutes

Ingredients

5 cup mushrooms

1 Garlic Clove

2-3 eggs

For the Sauce

2 tbsp Greek or goats yoghurt

Drizzle olive oil

1tsp onion powder

1 tsp garlic powder

Handful parsley chopped up

Squeeze of lemon juice

Instructions

Slice mushrooms, chop up garlic & parsley ! Add olive oil & mushrooms to pan. Whilst they are frying off mix all your sauce ingredients together until well combined. Once mushrooms are looking browner add in your garlic & parsley. You can now crack your eggs directly on top of the mushrooms & fry until cooked to your preference. The key to success and speed of this recipe are getting your pan nice and hot whilst you are slicing your mushrooms + whilst your mushrooms are getting golden to whip together the sauce.
