Brain Boosting Crunchy Potatoes

Serves: 2 Prep Time: 10 minutes Cook Time: 45 minutes

Ingredients

1 medium-large sweet potato
2tbsp rosemary
4tsp salt (more or less for your required saltiness)
1/4 cup Parmesan
Drizzle olive oil

Instructions

Use either a mortar and pestle or a food processor to combine the salt and rosemary. Drizzle your sliced potatoes in some olive oil and bake for around 15 mins at 200’C. Pull them out and coat with the herby salt, bake for another 20mins, or until crunchy.
*optional - sprinkle Parmesan on top and bake for another 5 for that extra crisp deliciousness*
