Brain Brownies

Serves: 10 | Prep Time: 10 Minutes | Cook Time: 15 Minutes

Ingredients

1 cup (227g) buckwheat flour

3/4 cup (75g) cacao powder

3/4 cup chopped walnuts

3/4  cup coconut sugar

1/2 cup unsalted butter, melted

1/4 cup olive oil (brain loving)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

Pinch of salt (optional)

Instructions

Preheat the Oven: Preheat your oven to 175°C. Grease an 8x8 inch (20x20 cm) baking pan or line it with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the buckwheat flour, cacao powder, baking powder, and a pinch of salt (if using) until well combined.

Combine Wet Ingredients: In a separate bowl, mix the melted butter, olive oil, coconut sugar, eggs, and vanilla extract until smooth.

Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix. If you're adding any optional ingredients like nuts or chocolate chips, fold them in at this stage.

Pour Batter into Pan: Pour the brownie batter into the prepared baking pan and spread it out evenly with a spatula.

Bake: Bake in the preheated oven for 15 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. Avoid overbaking to keep the brownies moist and fudgy.

Cool and Serve: Allow the brownies to cool in the pan for at least 10 minutes before cutting them into squares. Serve and enjoy!
