Lazy Girl Kimchi Omelette
Serves: 1 | Prep Time: 5 Minutes | Cook Time: 10 Minutes
Ingredients
3 eggs
Kimchi (1+tosp, everyone's tolerance to fermented foods is different, if you don't normally eat it I would start low and add more each time)
Pinch sea salt
1 spring onion
Optional small handful grated cheddar
Method
Heat up some ghee or olive oil in your pan, wait until it's at a medium high heat so it all cooks evenly
Add in your whole cracked eggs,
Once they look 2/3 cooked add your grated cheese and half of your spring onions
Once they are cooked to your preference slide them onto your plate, add on your kimchi and fold them in half to create your lazy girl omelette
Enjoy !
What makes this blood sugar loving?
1. Kimchi Juice: The liquid in kimchi, which is similar to vinegar, contains acetic acid, which improves insulin sensitivity, it can also reduce the rate at which glucose is released into the bloodstream after a meal, helping to keep blood sugar levels stable.
2. Protein & fat rich with low carbs: Protein takes much longer to digest than carbohydrates, leading to a way more gradual rise in blood sugar levels, this can help prevent spikes and crashes!
