Chickpea Dip

Serves: 2 | Prep Time: 5 Minutes | Cook Time: 10 Minutes

Ingredients

1 can organic chickpeas

1tsp Dijon mustard

1tbsp mayo (I used the olive oil one pinned on my page)

1/4 red onion finely chopped

Small handful chopped parsley

Pinch sea salt

Good crack of black pepper

Method

Cook your chickpeas in their chickpea water on a medium heat for around 10 minutes/ or until they have softened

Drain them out and mash together roughly, add in your mayo, mustard, salt, pepper, onion and parsley

Enjoy with crackers or on a sandwich!
