Blood Sugar Granola

Serves: 8 | Prep Time: 15 minutes | Cook Time: 30 Minutes

Ingredients:

1 cup chopped cashews

1/2 cup chopped almonds

1/2 cup chopped pecans

1/4 cup almond butter

1/4 cup coconut oil, melted

2 teaspoons sea salt

1/4 cup pumpkin seeds

1/4 cup hemp seeds

1/2cup coconut flakes

2 tablespoons cacao powder

4tsp cinnamon powder

2 tablespoons collagen powder

Instructions:

1. Preheat the oven to 150°C and line a baking sheet with baking paper.

2. Either roughly chop your nuts by hand or quickly blitz in the food processor.

3. Melt your coconut oil and add to a bowl, whisk in your almond butter until well combined

4. In a large bowl, combine the chopped nuts, almond butter, melted coconut oil, sea salt, pumpkin seeds, coconut flakes, cacao powder, and collagen powder. Mix well to coat everything evenly.

5. Spread the mixture evenly onto the prepared baking sheet.

6. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crunchy.

7. Remove from the oven and let it cool completely. The granola will crisp up as it cools.

8. Store in an airtight container at room temperature for up to two weeks.

How is it good for blood sugar?

They also contain magnesium, a mineral that plays a role in insulin sensitivity and blood sugar regulation.

  3. Zero sweeteners: Avoiding sweeteners, especially refined sugars, can help prevent spikes in blood sugar levels. These sweeteners can cause rapid increases in blood glucose, leading to insulin resistance over time. By avoiding sweeteners, you can help maintain stable blood sugar levels and improve insulin sensitivity.
