Pistachio Filled Cookies
Makes: 12 (Large) Cookies | Prep Time: 45 Minutes | Cook Time: 10 Minutes
Ingredients
For the Cookie Dough:
2 cups buckwheat flour
1 teaspoon baking powder
1/2 teaspoon sea salt
226 grams (1 cup) butter
3/4 cup coconut sugar
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups dark chocolate chips
For The Pistachio Filling:
1/4 cup Pistachio butter (If you can’t find one with quality ingredients, you can simply roast the nuts for 10 minutes and blend until smooth)
1/4 Double cream
Instructions
Brown the Butter
In a medium saucepan, melt the butter over medium heat. Continue to cook, swirling the pan occasionally, until the butter foams, turns golden brown, and has a nutty aroma. This should take about 5-7 minutes.
Remove the pan from heat and let the browned butter cool slightly.
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Prepare Cookie Dough
In a medium bowl, whisk together buckwheat flour, baking powder, and sea salt.
In a large bowl, combine the cooled browned butter and coconut sugar, mixing until well blended. Beat in the eggs and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the dark chocolate chips, then refridgerate your dough
Prepare your pistachio filling
In a small bowl add your pistachio butter and double cream & mix until beautifully combined. Then add your 12 x generous 1/2tbsp scoops either onto a baking tray or ideally into a silicone mould tray to freeze for 30 minutes.
Once frozen
Scoop about 1 tablespoon of cookie dough and flatten it slightly in your hand.
Place a small amount of the frozen pistachio filling in the center of the dough.
Scoop another tablespoon of dough, flatten it, and place it on top of the filling. Seal the edges by pressing the dough together, forming a filled cookie ball.
Place the filled cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
