Hibiscus Poached Pears

Ingredients

2 ripe pears, peeled

1 1/2 cups water

3 tbsp dried hibiscus flowers

1 tsp cinnamon powder

2 star anise

2 tsp cranberry powder (optional)

Coconut yoghurt (for serving)

Instructions

In a small saucepan, combine water, dried hibiscus flowers, cinnamon powder, and star anise. Bring to a boil, then reduce heat and let it simmer for 5 minutes to allow the flavours to blend.

Add the peeled pears to the saucepan, so they are submerged in the brew. Simmer gently for 20-25 minutes, until the pears are soft but not falling apart.

Remove the pears from the liquid and set them aside to cool slightly.

Turn the heat up and reduce the poaching liquid by half until it thickens into a syrup.

Plate the pears, drizzle with the hibiscus syrup, sprinkle with cranberry powder, and serve on a bed of coconut yoghurt.
