Matcha Pancakes

Makes; 6-8 pancakes | Prep Time: 5 Minutes | Cook Time: 15 Minutes | Total Time: 20 Minutes

Ingredients

1 cup all-purpose flour (or your preferred flour)

1 tbsp matcha powder

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 tbsp maple syrup

1 cup buttermilk

1 egg

2 tbsp melted butter (or oil)

1/2 tsp vanilla extract

Toppings (optional):

Coconut yoghurt

Strawberries

Maple syrup

Pistachios

Instructions

In a large mixing bowl, add flour, matcha powder, baking powder, baking soda, salt, buttermilk, egg, melted butter, vanilla extract, and maple syrup. Mix until just combined. Be careful not to overmix; a few lumps are fine.

Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil. Pour 1/4 cup of batter onto the pan for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden.

Stack the pancakes and top with coconut yoghurt, strawberries, a drizzle of maple syrup, and crushed pistachios, or your preferred toppings.
