Spicy Chicken Meatballs

Makes: 18-20 small meatballs| Prep Time: 10 Minutes | Cook Time: 12-15 Minutes | Total Time: 35 Minutes

Ingredients

500g chicken mince

3 spring onions, roughly chopped

3 cloves garlic

1/4 cup fresh coriander, roughly chopped

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chilli powder (adjust to taste)

Salt and pepper to taste

Olive oil (for brushing)

For Serving:

Greek yoghurt

Chopped fresh chilli

Extra chopped coriander or other herbs (like parsley or mint)

Instructions

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

In a food processor, add all the ingredients: chicken mince, spring onions, garlic, coriander, smoked paprika, cumin, chilli powder, salt, and pepper.

Pulse until everything is well combined but still has some texture.

Remove the mixture from the food processor and shape it into small meatballs.

Place the meatballs on the prepared baking sheet. Lightly brush them with olive oil.

Bake in the preheated oven for 12-15 minutes, or until the meatballs are cooked through and slightly browned.

Serve the meatballs with Greek yogurt, chopped fresh chilli, and extra chopped herbs for garnish.
