Rocky Road

Serves: 12+ | Prep Time: 30 Minutes | Cook Time: 5 Minutes | Cool Time: 2+hrs

Ingredients

For the vanilla/ white marshmallows 

1 cup water, divided

3 tablespoons gelatin powder

2tbsp honey

1 teaspoon vanilla extract

Pinch sea salt

For the pink/ cherry marshmallows 

1 Cup Cherry Juice

3 tablespoons gelatin powder

2tbsp honey

Pinch sea salt

+ 2tbsp cornflour for optional dusting 

For the gummies 

1 cup sour cherry juice (preferably unsweetened)

1/2 cup water

3 tablespoons gelatin

For the rocky road 

200g 85% dark chocolate 

1tbsp coconut oil 

1/2 tsp sea salt 

1 cup pistachios roughly chopped

Instructions

For the vanilla marshmallows

In a medium saucepan add in your water, sea salt, gelatin, vanilla & honey. Bring to a medium heat and stir consistently until the gelatin is fully dissolved and the mixture is smooth. 

Once well combined pour into a large mixing bowl (or if you have a stamina mixture pop it in there) and let it cool down to room temperature. 

Once cooled using an electric whisk, whiz it for around 5 minutes until it’s light and fluffy.

Line a 9x13-inch baking pan with parchment paper and dust it lightly with cornflour.

Once the marshmallow mixture is ready, pour it into the prepared pan. Use a spatula to spread it evenly.

Allow the marshmallows to set at room temperature for at least 1 hour before letting them set in the fridge. 

*repeat for pink marshmallows same method but sub your water for the cherry juice*

For the gummies 

In a medium saucepan, add in your sour cherry juice & gelatin, bring it up to a medium heat until it begins to lightly simmer. Stir continuously until the gelatin is completely dissolved and the mixture is smooth. 

Remove the saucepan from the heat.

Carefully pour the mixture into silicone gummy molds or a shallow baking dish lined with parchment paper.

Let the gummies cool to room temperature, then place them in the refrigerator to set for at least 1 hour or until firm.

Putting it all together

Once your gummies and marshmallows have set, pull them out of the fridge & feel free to chop them up to your desired size for your rocky road.

In a bain marie melt your chocolate, once melted add in your coconut oil & your sea salt.

Mix through your marshmallows and gummies and allow to set in the fridge for at least 2 hours before enjoying.
